Breakfast #5
Breakfast Burrito

What you’ll need:
1 whole wheat tortilla
2 eggs
Sprinkle of low-fat cheddar cheese
1 or 2 Tbsp salsa
2 slices of turkey bacon

How to make it:
Scramble eggs in a small skillet over medium heat. Cook bacon as listed above in the BLT recipe. Fill one side of the tortilla with scrambled eggs, cheese, bacon, and salsa. Roll up tortilla to form a burrito. Enjoy!

Lunch #5
Chicken Salad Sandwich

What you’ll need:
½ rotisserie chicken breast
1 TBSP light mayonnaise
¼ cup red grapes, halved
Pinch of salt and pepper
2 slices whole wheat bread
1 stick of celery, chopped

How to make it:
Cut chicken into cubes or shred. Place chicken, grapes, celery, mayo, salt, and pepper in a mixing bowl. Stir until well blended. Place in a separate container when taking to school. Put bread in a baggy and assemble sandwich during lunch to avoid a soggy sandwich. Pair this lunch with fresh fruit, string cheese, and/or baked potato chips.
